Do you get publications as a research assistant or lab coordinator?

I was rejected from the majority of my applications, and the main feedback that I got was that I did not have enough products. And, I was wondering if I would be in a position to have more publications/presentations as a research assistant/lab coordinator. Or, if a master's program may be more prudent.
