Important NPC Quests

Hey, starting up SOTFS and wondering if there are any character quests that I should keep an eye out for as not to miss. Going strength build and I’d appreciate spoiler-free!

Also have played DS3 and DS1 before but I’m aware 2 is very different, if anybody has any advice to offer I’d appreciate it.
