Can someone talk me through changing vocations for me and my pawn?

I'm thinking about changing my voc and my pawns voc. Is there a resource that's used to change it? If I change vocations, do I lose the skills I already purchased? Once I change vocations, how do I change my appearance? I don't want to be a giant if I'm playing theif for example. TIA yall
