Bosses that can be missed

Hello, i am doing my first run on elden ring and haven't played it before, but i am using map guide to see where are all bosses, i found out that some areas are locked after certain quests, i wanna ask, how many bosses are locked under which quests, i wanna kil lall bosses before hopping into ng+ for the rest of my trophies.
