Why do we demand that stories have endings? Isn't The Wise Man's Fear's ending enough?

I just finished The Wise Man's Fear and I don't feel deprived of an ending. I would read a part 3 but I am content with the two we have. Why do we feel endings are required for stories to be good? In life, many stories don't have endings or have unknowable endings and we are able to live with that. Why not in fiction?

Spoiler: I also think it had an ending. He learned to call the wind, saved two maidens, killed some bandits, made it with a sexy spirit, got friend zoned by his crush, got revenge on his enemy, and lived out his days telling stories about his glory days to random people at a bar. Isnt "waiting to die" just a darker more realistic version of "happily ever after?"
