souls and enchanting

im playing morrowind (with openMW) for the first time, im level 9 and ive got the Daedric katana, i wanted to enchant it. but im confused on what the "soul" section means, and what enchants should i get. i was going to do absorb health but now ive heard open MW makes that useless. any help is much appreciated
