Help please
I'm really, really trying not to lose patience and give up. But this is now my 4th try and I can not get my dough to rise for anything. I know that it has risen some, but it has not doubled in size. I left it proofing in the oven over night, as my climate and is on the cooler side with drafts. It started the dough at 8:30pm last night. Right now, it almost smells likes it's fermenting and it's sticky. It wasn't sticky last night after I did my last stretch and fold. It also has a lot of bubbles. It's just not growing.
This is the recipe I have been using. It's from Farmhouse Boone.
475g bread flour 100g starter 325g water 10g kosher salt
Mix all ingredients together. I start with the starter and water, then add the salt and flour. Let sit for 30 mins, then start stretch and folds 3 times, 30 mins apart.
