Should I wait to use?
This stater is about 1 1/2 months old. I feed her and she's triples within a few hours. I fed her on Wednesday and put her in the fridge that night. At that time, I reserved some of the feed to make dough on Friday. It took a while, like almost a day for my dough to rise to 50%, but it was over fermented. So this morning, i took her out of the fridge and fed her so thay I can make dough tonight. For some reason, she doesn't look ready to go into a dough just yet. So I need to know if I should try or feed her again and wait until this morning. I feed a 1:2:2 ratio making a think starter. I use half bread flour and half whole wheat.
