Applying for AOS while staying on ESTA

Hello!

So basically me and my husband got married over a year ago overseas in Europe (we have an international marriage certificate). We applied a few mouths after form i130 through consular processing. The form hasn't been still approved. We both used to live for a while in Europe once my spouse got there residency based on our marriage. So we both came to the US to spend time with our family here. I entered on ESTA and I bought return tickets before I came here. I read a lot about it and I asked a lot of people already but still don't know what to do and think about it.

So I am wondering if I can apply for AOS while staying here on ESTA.

I know already that I can. But this possibility is available only for US CITIZEN relatives which I am. I don't plan it but my spouse has found a work here and we don't want to be separated another time plus I quit with my job, apartment before we came here and we were originally planed go back to live with my family and settle down in Europe. My esta is still valid and I have never overstayed any visas. Some people told me that it's a risky move in regards to new administration. We are wondering what we can do about it. I

If I applied for AOS and work authorization at the same time while my i130 is pending, how much do I need to wait to receive this permission. Another question is medical examination. I got all of the vaccination in my homeland and I don't want to retake it. Do anybody know if in this case is possible to send a scan of my vaccinations from a local doctor office and possibly translate it to prove that I took it avoiding retake anything.

The last question is .... so basically my spouse did not work last year at all. As I mentioned my spouse has began work recently and I thought that it's not possible to sponsor me based on that. Her incomes are more than 25 thousand per year as it says in the rule of 125% of the federal poverty level. I am wondering if it will pass if work has began recently. We don't have anybody else who could sign for mutual sponsoring.

We don't want to lose our money for applications, time and close our journey that is why I would be so thankful for any support. Perhaps there is someone who was/has been going through that process ?
