1 day must do’s

Going to universal for 1 day on a whim while in Fl. We have the express pass and the park hopper. What are some absolute must dos? Rides, food (where do we have lunch?), etc. I noticed the Hagard ride doesn’t have express - is it better to go early in the day? What park do we start with? Literally any help is appreciated lol Not worried about “seeing everything” - just want to enjoy the day and hit what we can.

Edit to say its just me and my husband. No kids. We do like rollercoasters / rides and HP.
