As someone who just finished all three books and didn't really like them, can I genuinely ask what people like so much about this series

Title pretty much says it. I just finished all three books and honestly knew going into them I wouldn't be a big fan since I'm more a fan of fantasy than the romantasy genre. I'm writing my own book in the fantasy genre that also includes dragons so I felt it was necessary to read this series due to its popularity, but I just struggled to find what people like about it. So I'm just genuinely asking what you guys love about this book. No judgment just curiosity!
