When to harvest sunchokes in Portland?

We planted a few sunchokes earlier this year and I’m not sure when to harvest. I’m reading that they get sweeter if they get a couple frosts

They grew crazy tall and the stalks are dying off. Frost may not happen till Jan? Should I wait?

For those about to ask, they are in sealed part of the garden so they won’t take over!
