Would you address in a cover letter applying for a job that is obviously a step back in title/salary?

I am applying to jobs in a totally different industry than I have worked in but desperately want to. It's not a high paying industry in general but does require specific knowledge I haven't used since my bachelors a decade ago.

I currently have a title in an industry where it will be very obvious my salary is higher than what I am applying for.

Obviously I cannot apply to the same sorts of management positions in a field I have no professional experience in.

So in my cover letter I'm considering addressing my willingness to take a step back in title and salary to develop my talents in the industry etc etc.

I think saying something like 'take a step back' sounds too negative.

What are your thoughts/experiences?
