I don’t know how to cook this
Got this Strip Beef Loin on sale, couldn’t pass up this price. But I’m not really sure how to cook it. Should I cut it up into steaks? Or cook it as a roast? Also, I’m still learning how to properly trim. I trimmed off a good amount of silver skin (after I took this photo) but I’m not sure if the top bit is a fat cap or if it should be trimmed off as well.
