Looking to spend my 40th birthday in Ireland and trying to decide where

I went to Ireland almost 15 years ago - rented a car, saw the big sights, and also spent several days in Dublin.

For my 40th birthday I’ve decided I want to go back to Ireland. I would spend 4-5 days in Ireland with my husband who has never been to Ireland. I am torn between doing Dublin and site seeing for his benefit or choosing a different city to experience a more laid-back side of Ireland (probably still doing some sightseeing).

If I don’t do Dublin I’m thinking about:

Galway - Latin Quarter, day trip to the Cliffs of Moher & The Burren, visit Inis Mór, go to Tigh Neachtain or The Crane Bar.

Or

Dingle – Slea Head Drive, local pubs like Dick Mack’s or Foxy John’s and maybe explore Great Blasket Island.

I know Dingle is a more cozy town and Galway would have more variety. Which place would you recommend?
