Have you talked to your brother's about their opinion. I think it's odd how hyper focused he is and in turn they are on you. You are grown adult. You don't really need a dad having already had one. Just seems like a odd thing to fixate on which makes me think he brings it up a lot to your mom which is jist weird. NTA. Maybe you need a mediator of sorts. Whether that's a prof or a family member. Honestly you have been super polite about it. As a adult who had multiple steps. Idk that I would have treated it with such grace. I prob would have flipped out after having repeated this discussion so many times.

My brothers find it weird but they also think it's because I'm the only girl and there's some extra stuff that traditionally or at least in some cultures the dad's do. Like the Father of the Bride stuff in weddings. My younger brother finds it weird that he'd want to give me that family ring since we hardly know each other and I agree with that. There's just a lot and it feels extra weird to fixate that on me because I'm a girl.

It has been great to see her come back into herself and look so happy again. I think her happiness would be more lasting if she could accept the reality. She gets so sad every time I have to tell her no to this stuff.
